Hello Everyone! I will be using this page to share some recipes that I can't get enough of! I would like to remind everyone that these are recipes I've found, and I don't take credit for coming up with them on my own (unfortunately, I am not very creative in the kitchen....). I will only be posting the ingredients and a picture of the finished product (due to the layout of the page)- click on the source to view step by step cooking instructions.The newest recipes will be on the bottom, and the source will be listed above the picture. Please try them out and let us all know how you liked them- and, if you have the ability to get creative in the kitchen- let us know some ways to spice them up!

Chinese Orange-Barbecue Cashew Chicken

Ingredients (makes 4 servings):

  • 3 tablespoons canola or vegetable oil
  • 1 1/2 pounds boneless, skinless chicken breasts or thighs, chopped into bite-size pieces
  • Salt and black pepper
  • 1 red bell pepper, chopped into 1/2 inch dice
  • 1 onion, chopped into 1/2 inch dice
  • 2 to 3 cloves garlic, finely chopped or grated
  • 1 1-inch piece ginger, peeled and grated or finely chopped
  • 1 tablespoon hot sauce
  • 2 tablespoons tamari
  • 1/4 cup hoisin sauce
  • 1/4 cup orange marmalade
  • 1/2 cup chicken stock
  • 1/2 cup regular or honey-roasted cashews
  • 4 scallions, thinly sliced on a bias

Fresh Pasta with Pesto and Green Beans

Ingredients (makes 4-6 servings):
  • 1 1/2 cup fresh basil leaves, firmly packed
  • 1/2 cup pine nuts, toasted lightly in a pan over medium heat until golden brown
  • 2 cloves garlic, chopped
  • 1/2 cup extra-virgin olive oil, good quality
  • 3 tablespoons parmesan cheese, grated
  • 3 tablespoons asiago cheese, grated
  • salt
  • 12 ounces green beans, ends trimmed
  • 2 packages fresh fettuccini, 8 ounce packages

Pita Pizza

Ingredients (makes 1 serving):

  • 1 whole wheat pita
  • 2/3 cup marinara sauce
  • 1 ounce cheddar, sliced or diced
  • 2 ounces mozzarella, in pieces
